Forget the bags from the supermarket: you can make the tastiest (healthy!) Vegetable chips yourself! And it only takes a handful of quality ingredients.
Red, yellow and Chioggia beets
The main ingredient of these delicious chips has to be beetroot.

600 gram Beet mix
salt
20 grams Olive oil with truffle

3 mixing bowls

The method of preparation
Wash the beets and slice them into thin slices using a mandolin or food processor. For the best end result, keep the three different types of beet slices separate from each other and put each color in a separate mixing bowl. Sprinkle the slices with salt and toss everything together with your hands. Leave this for about 15 minutes.
Preheat the oven to 150 degrees Celsius. Remove the beetroot slices from the bowls and place them - by type - on a single sheet of kitchen paper. Clean the mixing bowls, dry them and then pat all slices well (!) Dry. Put the beets - again by type - back in the mixing bowls, and divide the olive oil with truffle over it. Mix well and make sure that each slice is covered with a thin layer of oil.
Divide the beet slices over baking trays lined with parchment paper and place in the oven. Bake for 20 minutes, turn the slices over and bake for another 20 minutes until crispy. Let the beet chips cool on a wire rack after baking to make them even crispier.
