Pasta meals, stewed meat dishes and hearty cheeses.
Fermentation begins with maceration for 15 days in temperature controlled stainless steel vats. Then 10% ripens in various barrels of different ages. The rest ripens in the mentioned barrels until the bottles are filled. After that 3 months of aging in the bottle.
