Gruyeré is a hard Swiss cheese known for its intricate flavor profile with delicious sweet and briny notes.
Cows grazing on the Swiss highlands provide no less than 400 liters of milk to make 1 wheel of Gruyeré. Because these cows graze on fresh grass, wild herbs and flowers, the Gruyeré develops its interesting flavors. This is reinforced by the maturation process where the wheels are surrounded with care: they are dipped in a brine bath and then regularly rubbed with salt and water. Thanks to this moisture, a fat-like layer develops that accelerates maturation. This gives the cheese its unique Gruyère flavor.
Ideal for the fondue but also delicious on bread, in toasted sandwiches or over onion soup.
