This Olde Remeker cheese is a white mold rind cheese matured for 13 months. The intense flavors are enhanced by the protein crystals found all over the creamy cheese.
Remeker is made from raw unprocessed milk and according to Gouda recipe. Particularly striking is the low salt content, which means that people on a low-salt diet can still enjoy a tasty cheese.
The Remeker farm only uses milk from a special type of cow, the Jersey cow. They also use Ghee (pure milk fat) to coat the cheese during ripening. This creates a beautiful white mold culture that imparts delicious flavor explosions to the entire organic cheese.
