The grapes for the Vouvray Brut are picked at their ripest and early in the morning to respect the quality of the fruit as well as possible. The must is then fermented in stainless steel and the wine is aged on fine lees before bottling. A second natural fermentation takes place as soon as the wine is in the bottle and is bubbling. The bottles are aged for two years before being poured. The Vouvray Brut "Traditional Method" is a mix of three different vintages per cuvée.

Both from wine growing families, Catherine and Didier embarked on this adventure in Vouvrillonne in 1983. Their desire for autonomy and freedom forced them to give life to the estate.
It all started with planting half a hectare of Chenin Blanc and waiting 3 years for the first harvest of the vine. This was followed by the first commercial contacts linked to the very first memorable bottling of Vouvray.
Currently 21 hectares of Chenin are cultivated according to sustainable viticulture. And a production of 120,000 bottles per year is distributed in about twenty countries around the world.
